Saffron Tiger planning to grow

saffrontigerAs one door closes for Saffron Tiger, another couple may be opening.

Saffron Tiger recently closed its sit-down location at 10701 Corrales Road NW with plans to instead focus on growing the “express” concept employed at the Saffron Tiger restaurant in Holly Plaza (6550 Paseo del Norte NE).

Saffron Tiger General Manager Pat Ulibarri told the Journal this week that the goal is to open two more of the express locations this year.

He compared the model to “kind of like a Panda Express but for Indian food,” in that customers can design their own combo plates from several different options. Diners order at a counter, compared with the traditional, sit-down experience that had been used at the Corrales Road location.

Saffron Tiger, owned by Dr. Kirby Gabys, is targeting a few specific expansion areas in Albuquerque, Ulibarri said, including Uptown and the University of New Mexico area.

Saffron Tiger opened the Holly Plaza location in 2009.

Thai Kitchen has posted signs at the old Saffron Tiger on Corrales Road indicating plans to open there soon.
