Philip Esparza said this week that he and his business partners expect to have their Nu Asia Vegan restaurant open this month at 4200 Central SE, just west of Washington.
The vegan food menu will draw upon a variety of Asian cuisines, including Thai, Indian, Chinese and Japanese. Esparza and partners Hkung S. Maran and Brang Jangma hail from the Philippines and Myanmar, and those influences also will come through in the food, he said.
The full-service restaurant also plans to incorporate an all-you-can-eat vegan sushi option, Esparza said.
Nu Asia Vegan takes over a 3,700-square-foot restaurant space emptied late last year when Cosmo Tapas closed after a 4½-year run.
