Blake’s will get possession of its SUB site next week and should open by July, said Craig Wood, business development manager for Blake’s.
Wood called the UNM site a “natural fit,” noting that Albuquerque-based Blake’s — a chain that dates to 1952 — already has a location at New Mexico State University in Las Cruces.
“We need to be at UNM. We’ve been trying to for quite a while, and everything worked out for both sides,” Wood told the Journal on Friday.
The Blake’s will go in the SUB next to Chick-fil-A. It won’t serve chicken but will sell other Lotaburger staples like breakfast burritos, hamburgers and milkshakes. Staff will prepare all food on-site, Wood said.
The UNM location serves as something of a replacement for the Lotaburger that recently closed at 413 Adams SE, part of the company’s continued “strategic repositioning” of stores. The old-fashioned walkup restaurant on Adams had been store No. 8 for Blake’s, a chain that now boasts more than 70 locations.
Blake’s – which expanded into El Paso earlier this year – is also in the process of opening a second location in that city. It should debut in July, Wood said.
