Brisket and fried peach pie, anyone?
Chef Gene Woodson will start dishing them out later this month when Marley’s Central Texas BBQ debuts in Northeast Albuquerque.
Woodson — recruited from Austin by Marley’s owner Shane Beckham — said the new full-service restaurant will specialize in the regional flavor associated with the middle of Texas.
“It’s dominated by the simple ingredients of black pepper and salt, very simple,” said Woodson, who’s been working in restaurants for about 30 years. “We have some complex rubs, but the basis of Central Texas barbecue is brisket.”
Marley’s will cook its version for about 18 hours in a custom smoker — a beast of a machine that can handle about 800 pounds of meat at once. The restaurant will also do pulled pork, spare ribs, chicken, turkey and sausage.
On the dessert spectrum, there’s cobbler and the aforementioned deep-fried pies.
Final preparations are under way at the Marley’s site, the former Little Mexico Grill space at 6219 Montgomery NE. Current plans call for a grand opening on June 28.
The restaurant – which can seat about 50 – will also do takeout and delivery.
