Ken and Cheryl Baker of Rio Rancho expect to open their Vanilla Bean Frozen Custard & Treatery at Unser Pavilion later this year, according to a news release. It will fill the last remaining suite in what the center’s developers have dubbed “restaurant row.”
The shop will offer multiple flavors of frozen custard, including a proprietary blend of pure vanilla extract, homemade fudge, specialty popcorn and candy. More familiar flavors — vanilla and chocolate, for example — are also in store.
“The owners are working to build a sensory experience for delicious, quality treats where guests experience the sights, sounds and smell of treats in the making,” shop spokeswoman Sandy Rea said in a statement.
Frozen custard — which incorporates more egg yolk and has a denser, creamier texture than traditional ice cream — has gained a higher profile in Albuquerque in recent years through specialty shops like the UNM area’s Chillz Frozen Custard and the local expansion of the Freddy’s Frozen Custard & Steakburgers chain.
Unser Pavilion, located across Unser Boulevard from the Presbyterian Rust Medical Center hospital, is owned and managed by Springer5 Investments. The property’s current and future food-related tenants include Einstein Bros. Bagels, Wise Pies and Prime.
