The Denver-based breakfast and lunch restaurant chain, The Egg & I, opened its first restaurant in Albuquerque this morning.
The restaurant opened this morning at 6 a.m., according to a news release. It is located next to the Chili’s on the northeast corner of Menaul and Louisiana.
The Egg & I Restaurants first opened in Fort Collins, Colo., in 1987, the release said. The chain has since spread to 15 states and has 60 locations.
Yesterday, the restaurant had its pre-opening training day and donated 100 percent of the proceeds to the Albuquerque Reads Program, a non-profit organization dedicated to assisting kindergarten students, the release said.
