Sweet victory for Hyatt chef

A chocolate creation by Chef Charity Teague, pastry chef at the Hyatt Regency Tamaya Resort & Spa, landed her top honors at the 21st annual Chocolate Fantasy gala, the hotel announced this week.

Teague’s chocolate sculpture, “A Green Fairy Tale: An Absinthe Fantasy,” took first place in the Hotels and Casinos category of Most Artistic Sculpture.

The work was inspired by this year’s Chocolate Fantasy theme of “Once Upon a Time, an Enchanted Chocolate Fantasy.”

The 2 1/2-foot-tall sculpture was made using Callebaut 53 percent dark chocolate and given a mahogany finish using painting and buffing techniques, a Hyatt news release explained. The green fairy on the sculpture was created by hand using modeling chocolate, sugar cubes and isomalt.

Teague was also recognized for her truffle samples. “The Absinthe Truffle” was made from Callebaut 53 percent dark chocolate that envelops a ganache and is infused with Lucid Absinthe Superiore, the Hyatt said. The truffles were adorned in sheer layers of green and gold glitter.

The Chocolate Fantasy took place on March 2 at the Hyatt Regency Tamaya Resort & Spa. Proceeds from the event auction and gala benefitted the New Mexico Museum of Natural History Foundation.
