“Vegetarian food for carnivores.” That’s how chef Shawn Weed describes his new restaurant, The Acre, set to open in early October.
“Most people get terrified when they hear ‘vegetarian,'” Weed said. “They think kale tossed with tofu. I don’t want that to be the experience (at The Acre). This is comfort food but reinvented without the meat.”
The new restaurant will be located in the shopping center on the southeast corner of Wyoming and Montgomery. According to Weed, The Acre will be 1,440-square feet and seat between 48 and 50 customers.
Weed has been in the restaurant industry for 26 years, working all over the country to hone his skills and he has decided to open his first restaurant in his home state.
The menu, which is comprised of local ingredients, will change regularly as different vegetables come into season, Weed said.
“I want to put a local touch on the dishes. It is important to stay local. This is our culture,” Weed said.
The chef said one of his main inspirations is his grandparents who had a farm in Pennsylvania and grew all of their food “fresh on the farm.”
The Acre has a five-year lease on the property, and Weed handled the leasing himself in negotiations with the center’s landlords, Ronco Investments.
