Culinary health: Class at Los Poblanos explores cooking with lavender, herbs

Learn how to cook with and benefit from the healing properties of lavender and herbs during a cooking class at Los Poblanos Historic Inn & Organic Farm in Los Ranchos.

The class on July 7 will be a hands-on learning experience with a demonstration.

“One of the easiest ways to enhance the flavor of the food you prepare is to add herbs,” Los Poblanos marketing manager Lauren Kemner said. “Join Chef Liz Gallery for a class centered on aromatic culinary herbs and leave knowing how to heighten the flavor of food. You’ll also learn about the incredible healing properties of culinary herbs and how to apply them in your own kitchen with practical uses.”

The menu will consist of five courses served with wines and elixirs. The courses are lavender sweet corn bisque with crispy potato and chive; vegan beet ravioli with piƱon truffle cheese, basil-infused olive oil and fresh greens; rosemary smoked portobello mushroom with spinach, white beans and parsley; focaccia made with Herbs de Los Poblanos; and a lemon lavender tart with fresh berries.

Many of the ingredients are grown on Los Poblanos’ grounds.

“Los Poblanos grows both lavender and culinary herbs on the farm, tended to by our dedicated farm team, and harvested by both the farmers and the chefs,” Kemner said. “Gardens are scattered across the property, with the majority of lavender planted in rows along the driveway, and herb gardens planted in close proximity to the various kitchens on property, as well as on the farm fields.”

Los Poblanos looks to include the community in its culinary programs, as well as offer patrons a fine dining experience at its restaurant, Campo.
