New Colombian bistro slated to open in Nob Hill

The handmade corn cake will be among the traditional South American foods served up at Ajiaco Colombian Bistro, scheduled to open next week in Nob Hill.

Ajiaco represents a new endeavor from Nubia and Pedro Sabogal. The couple, who hail from Bogota, previously owned El Pollo Real in the city’s International District.

Daughter Marcela Sierra said her parents started El Pollo Real with a Mexican-based menu but customers encouraged them to offer more dishes from their home country.

“Basically, they tried it at the end, and people loved the Colombian food,” she said.

The couple have since closed El Pollo Real to focus on their new concept and new location.

Ajiaco will open at 3216 Silver SE. It joins The Village, a small restaurant row that also includes P’tit Louis Bistro and Limonata.
