ALBUQUERQUE, N.M. — More yogi bowls and chai are coming our way.
The restaurant — which will seat about 45 — is the fourth for Annapurna’s, which also has sites near University of New Mexico, in the North Valley and in Santa Fe.
It is expected to open by late August or September.
Founder Yashoda Naidoo said her small chain has had a strong following from the Northeast Heights “since day one” and she wanted to give those customers a more convenient option. She also wanted a presence near The Ayurvedic Institute, a school/health spa for which she’s long cooked meals.
The first Annapurna’s opened in 2002. The chain has gradually expanded and will likely continue — perhaps even out of state. Naidoo said the first stop would likely be Denver.
“My goal is to get a location out of New Mexico,” she said.
However, she wanted to cover Annapurna’s hometown before that.
“Annapurna’s was born and raised in New Mexico (and) you take care of home first,” she said. “We’re glad to be able to bring our offering to the Northeast Heights. We’ve had people banging on our door for a long time, so I am glad we found the location.”
Naidoo worked with business partner David Montgomery, who also works in real estate, to secure the location.
The address of the new store is 5200 Eubank NE.
