ALBUQUERQUE, N.M. — Jim Shull jokes that he’s spent the last year telling people he was “three months” away from opening his new Nob Hill brewery.
This time, he might be right.
“I think we’re actually that close now,” Shull said this week of the brewery he first told the Journal about in 2013.
Barring any unexpected delays, Shull anticipates a summer opening for Hops Brewery at 3507 Central NE.
The building —once home to the Revolver Vintage boutique — has been boarded up, but there’s been progress behind the plywood, he said. Only a few projects remain, including work on the bar itself and a new facade.
“It’s been a long haul,” he said, noting that he’s done a lot of the work himself. “We had a lot of construction; we basically rebuilt that building.”
Hops has a three-barrel brewing system, and Shull has been experimenting with recipes. He said he plans to bring in an outside brewer, likely on a part-time basis, as the business ramps up.
Hops will supplement its own beers with other local beers and wines. It will also serve food, likely a small menu of appetizers and sandwiches, maybe including some of the selections he used to make when he owned Hello Deli.
Shull has already started working on getting the necessary approvals to open a taproom in Los Ranchos at 7222 4th NW.
