International Food Competition at the New Mexico State Fair

Recipes from all around the world were all in the Home Arts building at the New Mexico State Fair. 15 different dishes spanning from Pakistan, Ukraine, Sweden and more were all ready to be judged Thursday afternoon.

Unlike other state fair food competitions where plates are brought to a judges table, judges walk through tables for each category as a group. Each judge holds a place in the food industry, like Israel Rivera, owner of The Shop Breakfast and Lunch in Nob Hill.

Each of the judges taste a sample of each dish and comment as a collective on what they do and do not like from the dish, making notes about the color, texture, balance of flavors and more. Recipes are printed out so the judges can look through the ingredients and make suggestions on how to make the dish even better.

Entrees/Main Dishes - Aussie Meat Pie

Desserts/Sweets - Swedish Princess Cake
