New Marble owners still brewing future plans
Two veterans of Santa Fe Brewing Co. are hoping to revitalize the Marble brand.
Bert Boyce, a former Santa Fe Brewing brewmaster, and Jarrett Babincsak, the brewery’s former vice president of sales and marketing, recently purchased Marble Brewery, and they want to focus on keeping Marble a bustling destination.
“I think a lot of times businesses cast too wide a net,” said Boyce.
The plan is to make the three taproom locations better before thinking of expansion.
“At its peak, Marble was vibrant and dynamic,” said Babincsak.
He hopes to have live music at the taprooms and improve the customer experience. Babincsak said the Downtown taproom is at the forefront of Downtown revitalization.
“A brewery should be a gathering spot for the community,” said Boyce.
That doesn’t mean the beer will be taking a back seat, though. Boyce is pushing quality throughout the beer-making process by taking care of equipment, making sure the brewery has measures on quality and setting benchmarks for what success looks like.
As for new beers out of the taproom, Boyce said he needed more time to get to know the community and what customers want. He invited feedback from old and new patrons alike.

Years of experience
Babincsak has 23 years of brewery experience and Boyce has been in the business for 30 years.
Babincsak said the most important thing he has learned is the perspective he has gotten from his wife, who is an oncology nurse specializing in care for patients with cancer.
“This is fun, we’re lucky to be able to do this for a living,” he said.
The other thing he has learned is to be accountable. Babincsak said brewing is an industry based on relationships and being accountable is how he maintains support and partnerships.
Boyce previously worked at Samuel Adams Boston Brewery, where he learned to see beer from the customer’s perspective.
He said the customer may not know what they want or how to explain it. It’s his job to figure it out.
