Boxing Bear Brewing Company and Gallo Negro Tattoo have once again teamed up for its fourth collaboration beer.
The DR. INK ME collaboration is an experimental IPA style beer called Spineapple Pearalysis.
“IPAs are going to be determined by a few things,” said Justin Hamilton, director of brewing operations and owner of Boxing Bear Brewing Co. “Mainly, alcohol is one of them. Then your bitterness, your hoppiness, the aroma and flavors of the beer. So with experimental (IPA) you kind of get to play around with those parameters a little bit.”

Hamilton said there are few different things that make Spineapple Pearalysis an experimental IPA including the addition of pineapple and prickly pear with a variety of hops selected by Joshua Escobedo, owner of Gallo Negro Tattoo.
“We wanted to have something that was juicy and then throw in the prickly pear in there for a little tartness,” Escobedo said. “It kind of keeps it in that Southwestern realm.”
Hamilton said the collaboration beers with Gallo Negro have turned out “really awesome.” He added, Spineapple Pearalysis stands out as a different and unique beer, and he is happy with the result.
“(It) all came together really well,” Hamilton said. “We don’t really know how things are going to end up. Sometimes we throw darts at the wall and it works well. And this is one of those.”
Spineapple Pearalysis will be available at Boxing Bear’s two locations, 12501 Candelaria Road NE and 8420 Firestone Lane NE. It also will be available during IGNITE 4.0, a special release and local artist party from 6 to 10 p.m. on Saturday, Aug. 17, at 2505 Craftwerks Studio, 2505 Quincy St. NE.
“The last three years, we’ve thrown a release party at mine and my wife’s location, our business location,” Escobedo said. “We purchased a warehouse a while back. It’s a little over 3,000 square feet. My wife has a hair salon (Lavish Hair Lounge) and I have my tattoo shop, and then we have suites in there with nail techs. We have a coffee shop in there. And we all just really get together and throw this big event.”
Escobedo said the event will feature a hair fashion show, flash tattoos, local vendors and artisans, a dance floor, music and games.
“We kind of throw this block party where we have about 30 vendors set up for their art, whatever their crafts are,” Escobedo said. “And then we have like three food vendors. And then, just have a lot of music. A lot of people come down to hang out and pick up those four packs of the new beer.”
