Hotel Chaco hires executive chef
Sean Sinclair is head chef at Level 5 at Hotel Chaco
It’s a carousel of fine-dining experts.
Heritage Hotels & Resorts last week announced it hired Sean Sinclair to be the executive chef of Level 5, the rooftop restaurant and lounge at Hotel Chaco, 2000 Bellamah NW.
Sinclair most recently led culinary teams for The Inn and Spa at Loretto in Santa Fe and The Clyde Hotel.
The announcement that Sinclair would be joining Level 5 came after the restaurant lost its executive chef, Marc Quiñones, who left to become the executive chef at Ex Novo Brewing Co.’s upcoming location in Downtown Albuquerque.
“I have no doubt that our community and guests will be impressed with chef’s plans for Level 5,” Adrian Perez, the president of Heritage Hotels & Resorts, said in a statement. “We are beckoning in a new era for New Mexico’s culinary scene that will be unmatched, much like our rooftop views.”
A native of Tijeras, Sinclair graduated from Le Cordon Bleu culinary school in Portland, Oregon. He was the lead chef at Farm & Table in Albuquerque when it was named best restaurant in Albuquerque by USA Today.
“I’m excited to be a part of Hotel Chaco. Albuquerque is a place that I hold near and dear to my heart,” Sinclair said in a news release. “Level 5 is always listed amongst the top places to eat in the city, and I don’t think this is just because of the stunning Sandia Mountain views. We have an incredible culinary and bar program, and our guests expect to be wowed. I’m excited to share the next phase of Level 5 soon.”
