At the time of the inspection, person in charge has several priority violations as well as a pest and rodent infestation. Employees and management had very little knowledge of food safety practices. Food not protected from contamination. Sanitizer in sanitizer bucket not adequate. Food items in cold holding measuring above 41 degrees Fahrenheit. Shrimp thawing in standing water on counter. No ambient air thermometer during inspection. Food removed from original packaging that wasn’t properly labeled. Doors to the outside were not tight fitting. Employee drinking in undesignated area. Cleaned equipment stored improperly. Observed one live cockroach and 10 dead cockroaches on and near soda dispensing machine. Observed rodent droppings on several plates and on boxes for soda syrup.

RESULT: immediate closure
