No date-marking indicators on ready-to-eat time and temperature-controlled food. Buildup of soil residues on nonfood contact surfaces. Air gap at the drain pipe at the produce sink and floor drain next to cook station. Produce sink not maintained or in good repair. Food not protected from contamination during storage due to improper coverage. Person in charge unable to provide records of training or certification of food employees. No certified food protection manager on staff. Food items in the cold-holding unit measuring about 41 degrees. Insufficient cold-holding equipment. Buildup of soil residues on food-contact surface.

Food not properly labeled or identified. Poisonous or toxic materials stored in manner that could contaminate food. Observed food employee not washing hands when required. Handwashing sink used for purposes other than handwashing. Deep scratches in cutting surface. Employee wearing unapproved jewelry while preparing food. Observed food employee without proper hair restraints. Air gaps at several floor drains. Chlorine solution failing to meet parameters to adequately achieve sanitization.

Result: unsatisfactory, re-inspection required; approved upon re-inspection

Hilton Inn, 6510 Americas NE (June 16)

Observed employee medication improperly stored or labeled. Buildup of soil residues on food-contact surface, including orange slimy mold-like substance near and around ice dispensing chute. Doors to outside not tight-fitting. Faucet for three-compartment sink not in good maintained or in good repair. Food improperly stored with potential splash or dust contamination exposure. Food items in cold-holding unit measuring above 41 degrees. Insufficient cold-holding equipment. Sanitizer solution failing to meet parameters to adequately sanitize. No date-marking indicators on ready-to-eat time and temperature-controlled food. Ready-to-eat time and temperature-controlled food held within establishment beyond seven-day limit.

Result: closure, re-inspection required; approved upon re-inspection

Red Lobster, 5555 Montgomery NE (Class C) (June 17)

Poisonous or toxic materials stored in a manner that could contaminate utensils. Observed food employee not washing hands when required. Buildup of soil residues on nonfood contact surfaces.
