A coffee shop with big dreams for the future has plans to open its latest New Mexico restaurant.

This week, on the corner of Coors and St. Joseph's NW, 7 Brew will open its third location.

Ken Brock, the owner, used to own Freddy’s Frozen Custard & Steakburgers restaurants.

However, two years ago, he said he was ready for a change and sold his Freddy’s franchise to start 7 Brew.

The company uses a modular building which gives its locations a unique and consistent look.

“It took awhile to get started,” Brock said.

The coffee shop opened its first New Mexico location at 4331 Wyoming NE in July.

coffee shop opened more locations in quick succession. There is a store in Rio Rancho, and another 7 Brew opens on Coors Boulevard this week. Brock has plans for a fourth shop on Juan Tabo.

Brock is from New Mexico.

“You can’t beat this city,” he said.

His company partners with Children's Miracle Network, and every time Brock opens a new location, he donates $1,000 to the network.

Brock donated the money at a Rio Rancho event last week.

Children’s Miracle Network uses that money to provide education, charitable care, patient services, equipment, advancement services, research and treatment to children.

The network serves pediatric patients at University of New Mexico Hospital each year. The network has a service dog named Choco who works at UNMH, who attended the Rio Rancho event.
