Here’s how we know Tia Betty Blue’s takes her huevos rancheros seriously: she opens early and closes at 2 p.m. That means her main focus is breakfast. And there’s no better breakfast meal than huevos rancheros. And the other reason we know is because a lot of people say how great they are. (Getting them with carne adovado seems to be the favorite.) But they shouldn’t preclude you from trying the breakfast burrito or breakfast enchilada. Bring a friend or two and try them all.

The Original Cocina Azul (and the other Cocina Azuls for that matter) just does food right – morning, noon, and night. But their Huevos Rancheros are especially… well, special. Try them with Frank Sr.’s red chile for that extra kick. Feel free to pair them with standard breakfast fare, like pancakes and bacon.

No “best of” list of Mexican food in Albuquerque would be complete without including El Patio. And this is certainly true when it comes to their Huevos Rancheros. All of their food is authentic and homemade, and that’s certainly reflected in their reviews. Get them smothered in green chile for extra enjoyment. And make sure you get the sopapillas with honey.
